Spinach Salad

1 6-oz bag Spinach

½ cup Crumbled Feta Cheese

½ cup Dried Cranberries or Cherries

½ cup Pine Nuts

Combine all ingredients and toss with dressing…serve immediately!

Balsamic Vinaigrette

4 Tbsp extra virgin Olive Oil

2 Tbsp Balsamic Vinegar

¼ tsp dried Basil

¼ tsp Dijon Mustard

Pinch of sugar

Stir quickly with fork until combined…dressing will keep in the fridge for a few days in a closed container.
